Italian Sausage Soup
It’s a cold and rainy day today and I’ve been up all night with my sick little doggie It’s time for some comfort and I can’t think of anything better than filling my home with the aroma of hot soup simmering on the stove and French bread baking in the oven! Tonight’s dinner is an old favorite that is so incredibly good, quick and easy to make, and is over the top when it comes to comfort. I hope it will fill your home with love and warmth!
ITALIAN SAUSAGE SOUP
4 Italian sausages, 2 mild or hot/2 sweet
1 t. olive oil
2 stalks celery, sliced
1 onion, chopped
3 c. organic beef stock
1 can organic tomato sauce
1 t. salt
½ t. freshly ground pepper
½ t. organic dried basil, crushed
1 can organic kidney beans, drained
Grated Parmesan cheese, for garnish
Poke sausages with a fork several times, and boil for 15 minutes to remove grease; set aside to cool enough to handle. Once cooled, remove the casing and slice the sausage ½ inch thick; set aside.
Meanwhile, in a soup pot, sauté onion and celery in olive oil for 2 minutes. Add the sausage and the remaining ingredients and simmer for 30 minutes.
Serve with a baguette of hot French bread.
