Not Your Mom’s Turkey Sandwich
Yum, left over turkey! Yikes, what to do with all of it!
I’m not sure where I found this recipe, maybe it found me; I’ve had it for years and it is absolutely my favorite turkey sandwich. I hope you will enjoy it as well.
OPEN-FACED TURKEY SANDWICH WITH APPLE AND HAVARTI
4 slices country or peasant bread
4 t. low-fat mayonnaise
4 t. Dijon mustard
1 c. trimmed arugula (can substitute spinach)
4 oz. (1/8 “ thick) slices red onion
12 oz. thinly sliced turkey
2 apples, cored and cut crosswise into 8 slices
1/2 c. Havarti cheese, grated
Coarsely ground black pepper
Preheat broiler with oven rack in middle position. Spread each bread slice with 1 t. mayonnaise and 1 t. mustard. Layer each slice with one-fourth of the arugula, 1 slice onion, 3 oz. turkey, 4 apple slices, and 2 T. cheese.
Place sandwiches on a baking sheet, broil 4 minutes or until cheese is bubbly. Remove from heat; sprinkle with pepper. Serve immediately.
