Sweet Potato Minestrone
I absolutely LOVE this soup! It’s comforting, easy to make, healthy, and low cal! What more could you ask for in a one pot meal? You will be glad to have this in your chef’s bag of tricks after a long day of Christmas shopping when you are running on low energy and you need to get dinner on the table in a jiff. Enjoy!
2 t. Olive oil
1 medium Onion, diced
1 Celery stalk, diced
1 medium Carrot, diced
2 c. Water
1 (14 oz.) can Italian tomatoes, diced
1 (14 oz.) can reduced-sodium Chicken broth
2 Sweet potatoes (aka garnet yams), peeled and diced
1 c. canned small White beans
¼ t. salt
Pinch of pepper
2 c. fresh Spinach leaves, torn and lightly packed
Heat soup pot over medium high heat. Swirl in the oil; then stir in onion, celery, and carrot. Cover and cook until onion is softened, about 5 minutes.
Add water, tomatoes, broth, sweet potatoes, beans and salt & pepper; cover and bring to a boil. Reduce heat and simmer until sweet potatoes are tender, about 35 minutes.
Add spinach; cover and cook just until spinach wilts, about 45 seconds. Serve immediately.
