HOW TO STIR-FRY PRACTICALLY ANYTHING
Stir Fry. Quick, healthy, and yummy! Use this formula and you can get a healthy, nutritious dinner on the table with little fuss in no time at all.
1. Have all your ingredients cut, measured, and arranged in cooking order. Cook meats, then veggies, then add seasonings, such as garlic and ginger. Veggies such as broccoli, cauliflower, squash and carrots should be plunged into boiling water for 1 minute then drained and rinsed in cold water before stir-frying. Use about ¼ cup of meat to 2 cups of veggies.
2. Place your wok or frying pan over high heat. Heat a few minutes and then add oil – 2 tablespoons for every 2 cups of food. Test the oil to be sure it is hot enough to add food by holding a bamboo chopstick straight up in the oil. When oil bubbles up around the bottom of the stick, the oil is ready.
3. Add your meat or the item that takes the longest to cook. Turn and toss until it is cooked on all sides. Remove and drain on paper towels. Cook the next item, remove from wok and repeat procedure until last item is done.
4. Toss in the seasonings, such as garlic and ginger, and fry about 30 seconds, add about 2 tablespoons of your favorite sauce. Return the meat and veggies to the wok; stir in thickener (1 T. cornstarch w/ 4 T. cold water). Stir; cook about 1 minute until clear.
Serve with rice.
