Healthy Heart Cookie
Aside from containing vitamins C and A, potassium, and magnesium, watermelon also contains lycopene; a carotenoid phytonutrient that’s important for cardiovascular health. All at a whopping 45 calories per cup!
M-m-m-m-m I can almost taste the juicy goodness right now.
Heart Healthy Cookies
1 ripe watermelon
Sea salt (optional)
Place a cutting board on a rimmed cookie sheet (to catch the juices). Cut away the green rind from the entire watermelon. Cut the melon into slices the thickness of your cookie cutter. Sprinkle with sea salt for added flavor.
This is a fun way to get kids to be excited about eating a healthy snack or dessert instead of a sugar and who knows what else filled cookie from a package. I can see a platter of watermelon, trucks, flowers, balls, or doggies in your future!
