Mexican Pizza ~ Take Pizza Night to a Whole New Level
6 sprouted corn tortillas (I love Food for Life brand)
1 ½ cups of your favorite salsa
1-15 oz. can of organic black beans
1 organic red bell pepper, chopped
½ purple onion, chopped
1 medium jalapeño pepper, finely chopped
1 cup mild cheddar/jack cheese, shredded
1 fresh lime, cut into wedges
1 or 2 avocados, chopped
1- 8 oz. Greek yogurt, plain (a substitute for sour cream)
Preheat oven to 400º
Place the corn tortillas directly on the oven rack or on baking sheet and warm for 3-4 minutes or until tortillas become crisp but not rock hard. Remove the tortillas from the oven and pile on the toppings;
1- Spread each tortilla with a layer of salsa
2- Add a mound of black beans and spread to the edge
3- Do the same with the red peppers, onions, and jalapenos, ending with the cheese
Place tortillas on a foil lined baking sheet and bake for 8-10 minutes or until the cheese is melted.
Remove the pizzas from the oven; sprinkle with fresh lime, top with the avocado and a teaspoon of yogurt.
Serves: 3-6 depending on how hungry you are!
