Tri-Colored Bell Pepper Saute

OLYMPUS DIGITAL CAMERALooking for something quick (there’s that word again), easy, healthy and summeresque?  Used as a side dish or main course, this recipe hits home plate every time.

I’m not a green bell pepper fan, but use your favorites, it’s all good!

Tri-Colored Bell Pepper Saute

1 c. brown rice

1-2 t. sesame seeds

3 medium-size bell peppers of various colors

1 t. canola oil

1 small onion, cut into thin slivers

1 T. minced fresh ginger

1 clove garlic, minced or pressed

1 c. bean sprouts

2 t. Oriental sesame oil

Reduced-sodium soy sauce (optional)

Prepare rice according to  package directions.

Meanwhile in a wide nonstick frying pan or wok, stir the sesame seeds over medium heat until golden (about 3 minutes) and set aside.

Core and seed the bell peppers and cut into thin slivers about 2-3 inches long. Heat the canola oil in the pan over medium-high heat. When it’s hot, add the onion, ginger, and garlic; stir-fry for 1 minute. Add the peppers; stir-fry just until tender-crisp  (about 3 minutes). Add the bean sprouts and stir-fry until barely wilted (about 1 minute). Remove the pan from the heat and stir in the sesame oil.

Spoon the cooked rice onto a rimmed platter and spread the pepper mixture over the top; sprinkle with the toasted sesame seeds. Sprinkle with soy sauce to taste.

Serves 4
