Easy-Peasy Pea Salad
A real crowd pleaser! I’ve made this salad for many a pot lucks, picnics, and dinner parties and it’s always a hit; not one little pea left in the bowl. It’s a favorite around the dinner table too. Perfect for a warm summer’s day with it’s cool little green morsels; not to mention the bacon! Enjoy :o)
Suzi’s Pea Salad
3 oz. Fresh snow peas stems and strings removed
2 lb. Frozen, no salt added, petite peas, thawed
2 oz. Chopped red onion
1 oz. Crispy cooked bacon, crumbled
4 oz. Sliced water chestnuts, drained
½ c. Mayonnaise
1/3 c. Sour Cream
¾ t. Ground white pepper
In a large bowl, combine snow peas, petite peas, onion, bacon and water chestnuts; set aside.
In a small bowl, blend Mayonnaise, sour cream and pepper. Add the Mayonnaise mixture to the pea mixture; stir lightly to coat with dressing.
Serve garnished with additional snow peas if desired.
