South Hampton Stuffed Potatoes

SOUTH HAMPTON POTATOYesterday was one of ‘those’ days. Oh it started out pretty good alright…….. My body enthusiastically bounced out of bed ready to start the day; yet it didn’t take long to realize that my brain did not join the party. I had to read my Bible study four times before the light bulb went on. Half way through my work out, I realized my sports bra was on inside-out. Have you ever taken a shot of hairspray directly in your eyeball? Wow! 8:00 all ready?  The rest of the day, sad to say, followed suit.

By the time dinner rolled around I was ready to climb back into bed and attempt to start over. I needed comfort food and what’s more comforting than a baked potato overflowing with gooey cheese, melted butter, and the sweet taste of onion? I found this recipe back in the 80’s and have not made it for eons, but it fit the bill perfectly and was a great way to end a ‘wish-I-could-start-it-all-over’ day.

South Hampton Stuffed Potatoes

4 medium baking Potatoes

3 T. Butter, melted

¼ t. Salt

Freshly ground Pepper

½ c. grated Swiss cheese (I use Boar’s Head – it’s Heavenly!)

1/3 c. Sour Cream

1 small clove Garlic, pressed

2 Green onions, finely chopped

Scrub potatoes.  Dry with paper towel.  Rub with a little butter.  Pierce skin with a fork;  bake at 450 degrees  for 40-50 minutes.

Slice off ¼ inch opening across the  top of the potato.  Scoop out the pulp, being careful not to tear the skin.  Mix pulp with melted butter, salt and pepper; set aside.

In a small bowl, combine the Swiss cheese, sour cream, garlic and green onion.  Using half the potato mixture, partially the stuff potato shells.  Spoon an equal amount of cheese mixture into each potato, then stuff with the remaining potato mixture.

Bake for 15 minutes until heated through.  Serve hot. Pairs wonderfully with a nice juicy steak or steamed veggies!
