Good Ole Baked Macaroni
Both of my parents worked when I was a child; my dad during the day, my mom at night. So cooking dinner was shared by both of them. My dad liked to experiment more than my mom did, but the one thing they both made was Baked Macaroni. A delish casserole with a mouth-watering crunchy cheesy top filled with comfort!
Another great thing about this recipe is you can switch it up any way you’d like by adding spices, different shaped pastas, using a different cheese, and making it healthier by swapping out the beef for turkey burger. All ingredient measures are a guesstimate since my parent’s recipe was never put to paper. Enjoy!
1 medium onion, chopped
2 cloves of garlic, chopped (optional)
Olive oil or butter
1 lb. hamburger
1 15 oz. can diced tomatoes
Salt and pepper to taste
Italian seasoning to taste (optional)
1 box or bag of noodles
Parmesan cheese, grated
Cook the noodles following package directions and set aside.
Sauté the onion in olive oil for about 5 minutes; add the burger, breaking it up as it cooks and sauté until the meat is no longer pink. Once the burger is cooked, add the tomatoes and seasoning, and mix well.
Place the burger mixture into a casserole baking dish. Top with the cooked noodles in an even layer. Dot the top with butter and sprinkle with Parmesan cheese.
