The Best Queso Dip EVER!
Years ago there was a great restaurant in the San Francisco Bay area called Barley and Hops. The food was fantastic! One of my favorites was their queso dip appetizer; I’d go just for that – and a Margarita of course!
This dip is cheesy, gooey, goodness on a chip! I hope you enjoy it as much as I do.
Barley & Hops Queso Dip
8 oz. Cheddar Cheese, chopped into small cubes
8 oz. Monterey Jack Cheese, chopped into small cubes
1 medium Onion, chopped
1 large Tomato, chopped
½ cup fresh Spinach, shredded
Melt the cheeses over medium-low heat in a saucepan. Add the remaining ingredients and heat through.
Serve with tortilla chips and don’t forget the Margaritas!
