Black Bean and Corn Salsa

beach-cookout-260x200Going to a BBQ? Beach party? Looking for a crowd pleaser that’s healthy, easy to make, and easy to transport? This salsa is IT – unless you want left overs because every bean and nibblet will be gobbled up!

BLACK BEAN AND CORN SALSA

2 15 oz. cans black beans, drained and rinsed

2 12 oz. cans nibblets corn, drained

4 medium tomatoes, trimmed and diced

2 red bell peppers, cored, seeded and diced

¾ c. red onion, diced

2-3 fresh jalapeno chilies, seeds and veins removed, minced

½ c. lime juice

1 bunch Cilantro, washed, drained, and minced

2 t. salt

¾ t. ground cumin and pinch of cayenne

Mix all ingredients together and serve with tortilla chips
