My Cousin Cathy’s Strawberry and Spinach Salad

Whenever there’s a gathering, we always hope Cathy brings

her Strawberry and Spinach Salad! It’s pretty too :o)

Cathy’s Strawberry and Spinach Salad

 

2 – 5 oz. bags  organic baby spinach, stems removed

1 pint organic strawberries, washed, hulled, sliced

1 sweet red onion, sliced into thick rings

1/2 lb feta cheese, break into pieces

Dressing:  
1/2 c sugar

1 tsp dry mustard

1/2 tsp salt

1/3 cup cider vinegar

1 cup Canola oil

Poppy seeds to taste

Place all ingredients, except poppy seeds, in a blender and blend well. Add poppy seeds and stir gently.

Place all salad ingredients in a large bowl. Pour half the dressing on top and toss to coat. Can add more dressing if desired.
